HCG Exit Days 2 and 3 - Off HCG Drops
Ok, so I tried really hard to be good and stick to the HCG VLCD for these days, but I just got so hungry, so I upped my protein by quite a bit and still managed to lose .3 lbs both days! It’s nice going into HCG maintenance knowing I have a little extra cushion between me and a steak day.
I have already enjoyed scrambled eggs with diced turkey along with cottage cheese. I realize that both eggs and cottage cheese are allowed on Phase 2, but I just couldn’t figure out how to eat them then, but now my imagination is going crazy with ideas! I might have to spend some quality time in the kitchen this weekend making a few things ahead for the week…

HCG Maintenance – Day 1
Day 1 was a challenge right off the bat. After a simple breakfast of bacon and eggs, my husband insisted on taking a trip to our favorite barbeque restaurant for lunch. On one hand, I was excited because the food is amazing; on the other hand, I wasn’t sure if/how I could keep myself in check. We did end up going and we ordered a giant sampler platter that we split 4-ways (2 days’ worth of lunches for both of us).
I ended up eating a half-rack of ribs, to which I applied the least-sweet sauce as minimally as possible. Then I had a couple bites of beef brisket and a pile of sautéed salt and pepper string beans. I would have been completely satisfied if it weren’t for their mouth-watering, brown sugar covered, shoe-string sweet potato fries. My husband ordered some and I tried my hardest to resist. I’ll admit, I had a couple tiny pieces, but I was proud of myself for the self-control I exercised. It was really hard to not to just grab a handful and run away while shoving them in my mouth. For you see, my loving and supportive husband would be running after me trying to take them away from me, knowing what the consequences might be for me. I just hope our little outing didn’t have too much of an effect on my weight. We’ll see.
HCG Diet Maintenance – Day 2
Today I am only up .6 from my HCG LDW. Thank goodness! I definitely had more sugar, starch, and carbs than I probably should have yesterday, but I still managed to keep things under control. I’m very pleased.
So, today I decided to have a cooking day! I have been brainstorming for the last couple of weeks all the things I can have on maintenance and I want to try and make things easy on myself by cooking a bunch of stuff ahead of time. Especially when it comes to weekday breakfasts and lunches, I want to be prepared so I don’t have to be running around cooking when I’m trying to get ready for work.
Here’s what I made:
HCG Maintenance Oopsie Rolls
I found this recipe on the internet after I heard mention of them on our DIY HCG Facebook page. I looked at about 10 different recipes but they were pretty much all the same. I like the version with salt and Splenda the best (makes it taste that much more like bread). They really are amazing though! Totally sandwich-worthy.

HCG Maintenance / HCG P3 Breakfast Cups
Kind of like a crustless quiche, I like these because you can just use whatever ingredients you have. If you don’t have bacon, crumbled breakfast sausage or diced ham would work. If you don’t have spinach, you can use chopped up cooked broccoli or asparagus. It would also be great with bell peppers, onion, or tomato, too.

HCG Maintenance / HCG P3 Berry Sauce
I used to eat cottage cheese with a spoonful of homemade jam mixed in. But since my jam is made with sugar, I decided to make a multi-purpose berry sauce to mix in with cottage cheese and use as a topping. I’m excited to try it on sugar-free frozen yogurt and maybe even on a warm Oopsie Roll.

I have been working on this recipe for years and I believe I have perfected it! I was so excited in HCG Phase 2 when I realized I’d be able to have it this way on maintenance of HCG.

On top of all that, a couple days earlier my husband came home with a 23 lb turkey he bought for Sunday dinner so I was cooking that along with everything else. It was a busy day, but at the end of it I had so much to show for it!
