Creamy Tomato Basil Chicken

This Creamy Tomato Basil Chicken recipe is safe for Phase 2 of the HCG Diet and counts as 1 protein serving and 1 vegetable serving while on the low-calorie phase of the HCG Diet.

Ingredients
  • 8 oz canned petite diced tomatoes
  • 80 g boneless skinless cubed chicken breast
  • 20 g cut up cottage cheese, non-fat or 1% low-fat
  • 1/3 tsp minced garlic
  • 1/3 tsp dried basil
  • 1/4 tsp dried oregano
  • 1/8 tsp black pepper
  • Dash of salt
  • 2 drops clear stevia (optional)
  • Fresh basil optional
Instructions
  1. Add tomatoes, garlic, basil, oregano, pepper and stevia into a small saucepan.

  2. Mash the cottage cheese with a fork, since big curds don’t look super appetizing.

  3. Add to tomatoes and stir to combine ingredients.

  4. Cook over medium heat.

  5. Cube raw chicken breast, then add to heated tomato mixture.

  6. Bring it to a gentle boil, then turndown the heat to low and simmer for 5 minutes.

  7. Stir in fresh basil and serve!
