Garlic Shrimp & Spinach (Phase 2)

Ingredients

  • 2 tbsp water
  • 2 cloves garlic, sliced and divided
  • 1/4 lb fresh spinach
  • 1/8 tsp salt
  • 1 tsp lemon juice*
  • 100 grams shrimp
  • 1/8 tsp crushed red pepper

Instructions

  1. Heat 1 tbsp water in a medium size pot on medium heat.

  2. Add 1 clove garlic and cook 1-2 minutes.

  3. Add spinach and 1/16 tsp salt and toss to coat.

  4. Cook until mostly wilted 3-5 minutes, stirring occasionally.

  5. Remove from the stove and stir in lemon juice.

  6. Place in a bowl and keep warm.

  7. Increase heat to medium-high.

  8. Add 1 tbsp water and remaining garlic clove, cook 1-2 minutes.

  9. Add shrimp, crushed red pepper, and the remaining salt.

  10. Cook, stirring, until the shrimp are cooked through, 3-5 minutes.

  11. Serve the shrimp over the cooked spinach you set aside.

  12. Sprinkle with a dash of crushed red pepper and enjoy!
